Organic Cocoa Nibs (Beans) of Indian origin sourced by Cocoatrait exclusively are used to make fine flavoured bean to bar chocolate. Unlike processed chocolate, cocoa nibs are high in antioxidants, magnesium, potassium, iron, zinc, and brain-boosting flavonols. We process only organic ingredients. Organic Cocoa beans are roasted and the shell is removed. Further the shell is separated from the beans resulting in Organic Cocoa Nibs otherwise also called coco nibs. This is a 1Kg Roasted and sealed pack of Cocoa Nibs specifically roasted for chocolate making. In case you would like to learn how to do it yourself, please evaluate how our 4 day bean to bar certification workshop can help you! You can now buy ceremonial cacao in India! Yes! Used for cacao ceremonies, Ceremonial Cacao is cacao in its purest paste form and does not taste like chocolate! It has no sweetener. The only ingredient present in ceremonial cacao is roasted and ground whole shelled organic cacao beans. Nothing more, nothing less. Nothing is ever added, chemically altered or taken away. Unlike hot chocolate which is made from cacao powder (where the cocoa butter is pressed out), we leave in the cacao butter, the carrier of all of cacao’s benefits. The drink is made with hot water, minimal sweetener (if so desired) – by contrast to a typical hot chocolate made with cocoa powder, sugar and milk!
The traditional ceremonial grade cacao is produced from Native Cacao Strains which grow naturally. They grow in the wild and without human interaction/cultivation in South American countries like Guatemala & Peru. These strains are both the rarest and contain the compounds in most concentration, necessary for ceremonial use. Ceremonial cacao is said to “open clear channels between the body, the heart, and a divine spirit”. When consumed in “ceremonial” quantities (30-60 Grams), the mixture produces a wide range of reactions from feeling of openness and ecstasy to hallucinations in rare cases, according to regular practitioners.
For the uninitiated, ceremonial cacao does not taste like hot chocolate! It tastes purer and you feel more connected to the cacao.
Technically speaking, cacao paste and ceremonial cacao are made of the same ingredients. It’s the thoughtfulness and tradition in processing (low temperature roasting, hand cracking & stone grinding) and the intention in drinking ceremonial cacao that differentiates it from cacao paste. In a regular 100% cocoa paste, butter and vanilla is usually added. However, nothing is taken out or added during this process to ceremonial cacao, which leaves the ceremonial cacao pure.
To be absolutely clear, honest, upfront & transparent, “We do not use the original Native Cacao Strains grown in Guatemala & Peru to make the ceremonial grade cacao. Also, we do not hand peel the husks. This is mainly to avoid any human contact during this time of pandemic.” Kocoatrait ceremonial cacao proudly uses Organic Indian cacao with an aim to be local and Make in India and Made for India. However, we do encourage you to consume this as usual during a cacao ceremony!
However, while we carefully follow the low roasting and stone grinding process as prescribed (to the T), we cannot get hold of the Native Cacao Strains in India! Simply because it does not grow in india and is limited to Guatemala & Peru. It is made available in blocks which you can cut or shave. You can now buy ceremonial cacao in India from Kocoatrait.
